Homemade Granola

I find myself turning to nuts and seeds these days for simple meals and snacks. I have made granola since Gabrielle Silva gave me her delicious recipe in 1980 (which of course I’ve mutated).  We will be offering this special version as a new City Club signature dish.

Find the little sample bags adjacent to the concierge. And here’s that recipe:

Mix in large bowl:

6 c. rolled oats (we use GF)

2 c. flaked dried coconut (we use organic)

1 c almond flour/meal

1 c. raw sunflower seeds

1 c. raw pumpkin seeds

1 c. sliced almonds

1 c. chopped walnuts

1 c. chopped raw pecans

1 c. raw pistachios

1/2 c . raw pine nuts

1/4 c. white sesame seeds

1/4 c. black sesame seeds

Whisk together the following and stir into above dry mix.

1/4 c. maple syrup

1/3 c. molasses

1/3 c. honey (I used Tupelo)

1/2 c. walnut oil

1 tsp. orange extract

1 tsp. almond extract

Bake at 250 degrees stirring every 15 minutes until golden. Stir in 1 c. dried berries or raisins. Cool and store in refrigerator.
